Extreme Chocolate Chewy Bars Use your favorite BiscottiO cookie mix along with our best ever chocolate cake mix to create chewy bars! Recipe adapted from Pampered Chef's Chewy Chocolate-Coconut Joy Bars. All rights reserved. Ingredients: 1 bag BiscottiO Mocha Cranberry Cookie mix 1 bag BiscottiO Best Ever Chocolate Cake mix 1/2 cup brown sugar, packed (optional) 1 pkg (7 oz/200 g) organic flaked coconut 1-1/4 cup (300 mL) semi-sweet chocolate chips Directions: Preheat oven to 400°F (200°C). Follow instructions to mix Mocha Cranberry Cookie mix, or your favorite cookie mix, until crumbly. Press crumb mixture evenly onto bottom of large cookie sheet. Bake 8–10 minutes. Remove pan from oven to cooling rack. Meanwhile, in clean batter bowl, prepare Best Ever Chocolate Cake mix according to package directions. Add 1/2 cup of brown sugar for extra chewiness (optional). Pour batter over hot crust; carefully spread to edges. Sprinkle batter evenly with 1/2 cup (125 mL) of the chocolate chips and coconut. Bake 10–12 minutes or until coconut is toasted. Place remaining 3/4 cup (175 mL) chocolate chips in small glass bowl. Microwave, uncovered, on HIGH 1 minute or until mostly melted, stirring every 20 seconds. Spoon melted chocolate into resealable plastic bag. Twist top of bag; trim corner. Drizzle chocolate over toasted coconut topping. Garnish with toasted sliced almonds, if desired. Cut into 24 bars; serve warm or at room temperature. Yield: 24 bars
